We want this light refreshing beer to really relfect our region, to capture the character of the air, the vibes, around us. ⁣

We brewed it with a base of malted barley and raw and malted spelt, all from Deer Creek Malthouse, and hopped it with some of our attic aged hops and some fresh noble varieties. It was fermented with our 2019 foraged yeast in the saison style. After fermentation we conditioned the beer with some chammomile and lemongrass from Oma Teas in Schwenksville. It was packaged and primed in bottles and kegs with our mixed culture to develop natural carbonation and some delicate funk and acidity. ⁣

At times it has notes of herbal lemonade, fruity chammomile honey, lime seltzer water, maybe some cinnamon, ethereal brettanomyces fruit snacks, sleepy teas that clear your mind, and that funky saison chewing gum.⁣

Zesty, effervescent, and refreshing. Lemongrass comes through most, with supportive chamomile & coriander lingering in the aftertaste. Crisp and clean, well carbed and mild lemon-lime tartness. Bright golden orange tone, light aroma of herbs and wet hay. Lovely refresher on a mid-80’s afternoon, perfect day for the hop harvest.

A: The beer is hazy golden yellow in color. It poured with a quarter finger high frothy white head that has good retention properties and consistently left a short head covering the surface and lots of lacing down the sides of the glass.
S: Light- to moderate aromas of lemongrass are present in the nose along with hints of yeast.
T: The taste has flavors of lemongrass and chamomile along with hints of yeast.
M: It feels light- to medium-bodied and tart on the palate with a moderate amount of carbonation.
O: I really liked the tartness and lemongrass in this saison.
