A light little saison that's very special to us, evolved from the very earliest saisons we brewed here. Mashed with local barley and spelt from Deer Creek Malthouse, hopped with an exuberant amount of Hersbrucker, fermented with our foraged yeast, and conditioned in the can for extra character and maximum tiny bubbles. Note, this batch is the first beer brewed with this year's foraged yeast, cultured from spring blossoms on the brewery property.

10/19/25 - (Can - Home) (Chicago, IL) Can Notes: Purchased at Beer on the Wall at Park Ridge at store temperature for $4.55 including tax on September 12, 2025. Refrigerated upon returning home until opening this morning. 16 oz, no can date, distributed week ended 8/9/25. Saison, 4.5% Alcohol By Volume - Highly Carbonated, Open With Care, Pour Slowly. Hops: Hersbrucker. Malt: Barley and Spelt. Brewed and packaged by Forest & Main Brewing Company, 241 N. Main Street, Ambler, Pennsylvania.

Appearance: Slow poured 3/4 of the can into a large tulip glass, yielding a slightly unfiltered golden straw yellow base, heavy sustained carbonation throughout, a full creamy bright bubbly head which results in substantial clumpy lacing but a creamy sustained 1/4 inch cover over the base and a thicker creamy ring around the rim. 4.25

Aroma: Clove, banana, pepper, lemon. Medium plus strength, slightly higher in enjoyment. 4.0

Taste: Tart lemon, subdued clove and banana, light but good and consistent with the style. 3.75

Mouthfeel: Light, crisp clean and refreshing. Hop bitterness runs this sensation, lightly dry, light body bolstered by persistent slightly prickly carbonation drinks very easy, even for the style. Lemon clove the entire ride. 3.75

Overall: This one worked out well, consistent with the style. Aroma stronger with more breadth than taste. Enjoying as Summer weather is coming to a close. 3.75

Poured from a 16 ounce can into a Willi Becher pint glass.
L - Poured a lemon yellow color with a frothy white head.
S - Smells spicy.
T - Tastes of lemons and nicely funky.
F - Medium to light bodied with a medium carbonation.
O - Very tasty saison.

Very, very lively beer, with an absolutely roiling body keeping the strong fluffy white head going strong long after the pour. Golden body, crystal clear despite being disturbed by significant action.

Absolutely classic aroma: straw and hay, lightly musty; honey; a touch of clove. Very expressive.

Equally classic on the palate. Very slightly sharp, and equally slightly sweet, all adding depth and nuance to an otherwise fairly neutral grainy malt base. Straw, hay, honey, grape must, pepper, orange peel, white wine.

This is an excellent saison that delivers on everything you could expect from a Hennepin or Saison Dupont-style experience, with a little twist from Forest & Main's wild foraged yeast.

16 oz. can. Lightly murky orange. Smells of clove-spiced and herbal yeast and grainy malts. Tastes sharply sweet up front. A touch of lemon. Grain. Earthy yeast in the back with some spice and banana. Medium light. It's a little sweet, which gets in the way of it being excellent, but it's very nice.

16 oz can poured into a tulip

A- A hazy golden copper with a three finger white head.

S- Wheat, light fruits/pears, some lemons, a very nice earthy funk.

T- Slightly tart, lemons, pears, light fruit, wheat, a very nice earthy funk.

M- Smooth, light to medium body.

O- A beautiful saison, very easy to drink. Comparable to beer like Orval and Saison DuPont given how yeast driven this .
