750ml capped bottle into a Founder's snifter.
Super carbonated but falls flat quickly. Slightly cloudy. Nose is dank farmhouse. I get white grape skin, funky cheese and wood, cobweb, foam, stinky yeast, and lemon zest. Super aromatic with great complexity. Beer opens apple, lemon zest, and peppercorn up front. Oak, grape skin, and rotting wood in the middle. A yeasty cheesiness towards the end with a slight vinegary tartness in the finish. Body is light with ample carbonation. Prickly and lively on the palate and goes down aggressive, sparkling with a long, lingering aftertaste.
Really nice flavor profile though there's a touch of vinegar at the finish that I could do without.
