This is a really lovely darker saison brewed with malts from Deer Creek Malthouse, fermented with our 2020 Foraged Yeast Culture, and conditioned in the bottle for extra character and delightful foam.
The Inner Sound makes us think of rustic Belgian Abbey ales, dried dates, sweet plums with tart skins, dark anise tea, nectarines, the chocolate isle at the co-op, a tin of pipe tobacco, and some salty sea spray.

750 ml bottle, capped. Bottled 2/24/2021
First pour is clear dark brown, then the subsequent pours get cloudier with yeast. Very lively carbonation, huge rocky head that stays around. Very complex aroma and taste - tart and a little funky. Hay, bread crust, apple cider vinegar, leather, black raspberry, tea. Slightly acidic, thinner bodied, high carbonation.

Yet another Saison from my trip to Forest & Main! This time a dark one which definitely excites me more than the raspberry fruited one. Let’s see how much more depth this one has
Pours an opaque medium brown with 3+ fingers of gushing off white head that very slowly fades to a cap and leaves decent lacing
This has an interesting blend of funk and earth on the nose. I’m picking up on aromas of tart cherry, brown bread, old leather, black tea, wet hay, lemon zest, and light brown sugar
There’s a more defined tartness and funk in taste, and it’s delicious. On the front end of the sip I’m tasting red plum, tart cherry, red wine vinegar, toasted oak, toffee, straw, and brown bread. The swallow brings notes of dark toast, lemon juice, toasted oak, tart cherry, old leather, tobacco, brown bread, and gummy raisin
A light medium body pairs with moderately aggressive carbonation, resulting in a tart and acidic beer. Finishes a tad sticky but nicely complex
This is a great beer. It’s super complex and evolves throughout the bottle. This is what I was looking for from them
