A fruited saison, brewed with malts from Deer Creek Malthouse, hopped with some of our attic aged hops and some fresh hops, fermented with our 2020 Foraged Yeast Culture, aged in wine barrels with our mixed culture, conditioned on raspberries, and refermented in the bottle. Phew! Insane notes of a big handful of raspberries stuffed in your mouth, fresh strawberries, but also those hard strawberry candies with the wrappers that also look like strawberries, some attic procured hop funk, some tropical brettanomyces funk, and just a lovely party of fruitiness and saison dryness. This one is exuberantly carbonated, so please chill completely and handle gently prior to opening. Like all our bottles of saison, this one contains a layer of yeast at the bottom of the bottle. This combined with the raspberry sediment can produce some cloudiness upon opening if not decanted gently.

I finally got down to Forest & Main while I was visiting Philly and left with a bunch of goodies. I did a lot of their Milds, but I had to grab some of the funky stuff they’re more known for. Funnily enough, none of these were even in the database, so they must be relatively small releases. Let’s see what this raspberry Saison is all about

Pours an opaque pinkish orange with 3 fingers of pink tinted white head that fades to a ring and leaves minimal lacing

The fruit in the nose is super vibrant, there’s honestly not much funk to it. I’m picking up on aromas of raspberry, lemon juice, bready malt, hibiscus, and light strawberry

In taste, there’s at least some more tartness, but not the funk or earthiness I’m really looking for, at least not much of it. On the front end of the sip I’m tasting juicy strawberry, tart raspberry, lemon juice, and crackery malt. The swallow brings notes of lemon juice, tart raspberry, earthy wheat, bready malt, and hibiscus

A light medium body pairs with moderate carbonation, resulting in a crisp and sharp beer. Finishes mostly dry with a balanced tartness

This isn’t exactly what it set out to be, but it is goddamn tasty. I’m looking forward to the rest of their traditional Saisons
