The Room Below was brewed with barley and malted spelt from Deer Creek Malthouse and hopped with our favourite German hops. We fermented it with our 2020 Foraged Yeast Culture and conditioned it in the bottle with our Mixed Culture. It presently has notes of Juicy Fruit Gum, tangerine popsicles, oak that wasn’t used, fucked up lemonade, high tide rockpile salt spray, miscellaneous dried herbs, and some rustic apple cider. It was bottled on June 15, 2020, and has developed some lovely funk and acidity. It tastes phenomenal now, but will likely continue to evolve.

Bottled 7/15/20
Just as soon as I made a trip to Forest & Main for the first time, this is my last new one. I’ve been impressed with their Saison game so far, and I’m hoping this one keeps up. To be 100% honest, the main reason I chose to buy a bottle of this over a different Saison was their flavor description of “fucked up lemonade”. If that’s not intriguing, I don’t know what is
Pours a cloudy orange gold with 2 fingers of white head that quickly fades to a thin cap and leaves minimal lacing
This one is more earthy rather than tart ( as I prefer) in the aroma, but this one is nicely done. I’m picking up on aromas of white pepper, bready malt, clove, wet hay, sharp oak, lemon juice, and white wine vinegar
Oh man, it’s even better in taste with just a bit more tartness to really tie it together. On the front end of the sip I’m tasting lemon juice, crackery malt, straw, fresh leather, white wine, apple skin, and sharp oak. The swallow brings notes of, well, fucked up lemonade! As well as white pepper, white wine vinegar, orange zest, clove, wet hay, and fresh leather
A light medium body pairs with moderately aggressive carbonation, resulting in a zesty and super refreshing beer. Finishes semi dey and nicely tart
This is a geeat beer. As I’ve said, this is not my preferred expression of the style, but this one knocks it out of the park. I hope to get out to Forest & Main again someday. Hopefully I can stock up on more bottles to last me longer next time
