Comet Lager - 5.1%
We wanted to brew this one with a bit more pronounced modern hop character, but still retain the elegant qualities of good traditional lagers. We started with a base of German Pilsner malt and hopped it generously with Comet, before fermenting it cold and slow with our monastic lager yeast. Comet hops seemed well suited to the task, they have a lovely American citrus quality, but remain elegantly herbal like nice European hops.
