a pale and simple and fruity (but not fruited) saison, less wild than other saison types i have had from these guys, which is to say this isnt wild at all, rather a clean belgian type fermentation profile, and a mild one at that, tame yeast esters here, no funk at all, and with all of its rustic character coming from the grain, which appears to have quite a few pale malts in the works, some peppery rye and some fluffy wheat among them i reckon. the beer shines golden, the nose is uniquely hoppy for the style, and notes of green pear and white wine emerge from the yeast, along with some soft citrus tones. fleshy orange from the hops in the taste, some noble type grassiness too, a little green, but strikingly fresh, something i rarely notice in dry hopped saison, but somehow the freshness of this beer really pops. in addition, there are some cool cereal notes in this, and it feels sort of expansive while also being light, with a touch of sweetness in it, even at the end, nice with the yeast esters and the fruity hops, but also all sort of understated in a way that makes this drinkable and even refreshing, not as overtly complex as some of them are, but i see that as a positive for some reason in this, its all very cohesive and well built, even if its a little less sexy from a fermentation standpoint than some of the other block 15 saison types ive encountered in the past. light in feel with a summery complexion, cool hop profile without much bitterness, and a thoughtful grain build. i love what these guys are doing, and im drinking all i can find of their beers right now!
