They use a large oak foudre for conditioning and reserving a portion for blending with the next batch. Clear golden amber brew with plenty of foam in the Hopleaf goblet. Quite a perfumey aroma. Flavor is powerful, with a yeasty mix in the cereal taste. The usual touch of dried pear and a dry finish. Really interesting but quite robust with some hoppy notes and a hint of astringency. Eventually a yeasty bitterness that does not let go. From the 15 oz can purchased at The Garden Path. Label says this first batch was released in October 2022.

Can.

A clear light orange with a white head with good retention and lacing. The nose is a great blend of warm saison fermentation notes, spicy, fruity, mildly estery, with pepper, clove, pear, mild floral notes and a clean straw base. A mild Brett character with light clove and a touch of plastic are present. The palate opens fruity and estery with warming spices. Pear, light straw, pepper and mild phenols. The mid-palate has the Brett notes which don't entirely work with the gorgeous base saison IMO, with the notes being harsher and with clove and a little plastic. This dissipates as it breathes. A touch sweet and fruity on the finish. Tasty.
