Look: Pours a dark yellow, almost bronze, and my rigorous pour generates a sudsy white head that slowly settles to a lid, leaving sheets of lacing behind
Aroma: Brettanomyces yeast, barnyard funk, wet hay, lemon zest, leather, musty basement, oak, some tartness, floral notes, herbal notes, and freshly baked bread
Taste: Starts out with wet hay and quickly joined by sour citrusy notes and oak that hit hard and settle. Leather, must, dank, and overall funk start to unpack in the middle with some herbal and floral components peeking in and out throughout as everything develops depth and as it trends towards the finish, wet hay and lemons become prominent again before leather and Brett yeast close it out
Mouthfeel: Full but light feeling, fairly clean, medium-high carbonation, and some dryness is felt on the finish. A higher ABV than I typically see in the style but it does not drink like it at all
Overall: This is very delicious stuff. I wanted to try this if I saw it available near me and it did not let down my somewhat unfairly high expectations as it is a tasty, well-made, and deep funky Saison. The blending done here shows through and it is definitely a fruit-forward Saison, which is new to me but wonderfully executed here. Nice funk and oak come through from the foeder aging too and is quickly becoming a beer that I cannot stop returning for more sips. Highly recommended
