an exceptional take on the style here, nice fresh lime character, appreciable saltiness, light bodied, well refined, quenching and summery, not a lot of frills in this one and they arent needed, less is more in these for me lately, and this is really well done. some haze in this, permissible in the style, good head and carbonation, looks pedestrian but smells and tastes fantastic, with real lime apparent, zest and essential oily and even somewhat acidic on top of the tartness of the base wheat beer, which adds a quickness and a pucker that are flattering, not too sour overall to really drink on, they nailed the combined intensity. the salt is clean and quickening, has some light minerality to it, but really serves to dry this out more than flavor it, its most noticeable right after the swallow, palate clearing for the next sip to be brand new again. the base souring here is nice, its clean, lightly citrusy which is of course compatible with the lime, and i think the proportions of everything are really spot on. i can still taste and also feel some wheat malt in here, which is more than can be said for a lot of these. this is zippy and bright and delicious. i know i keep gushing over all the beer these guys make, but really all of it is fire. its impressive how many different styles they are doing at a high level right now, just awesome!

On a hot summer day with a gentle breeze, this beer goes down smoothly. The last beer, Japanese Rice Lager, was a treat with lots of adjuncts; I expect the same from the next one. I opted for a pokal; the serving temperature is 40 degrees. The pour created a frothy, foamy, three-fingered head with above-average retention. The slow dissipation left chunks of lacing on the glass. The color is pale straw with a light golden hue, charting at SRM 4, and translucent.
Lime is the dominant aroma; I'm not sure how they managed to capture the scent of the lime peel with the pithy middle, but it smells like fresh lime. Nosing the glass again, I detect crackers, salt, and light maltiness.
The lime is ripe and vibrant; although the lime flavor is strong, it is not overpowering. The Gose base beer is characterized by its salty notes, lightly toasted malts, and subtle malty sweetness.
The mouthfeel is crisp, finishing dry with a light tartness. The body is light with medium-plus carbonation.
Final Thought: The lime makes this beer amazing. I loved sipping on this beer after a long day. It is one of my favorite beers thus far.
