Pours foggy, straw gold (SRM 2-4). A short-lived, loose and off-white head falls from one and a half inches to a thin blanket fairly quickly. Occasional spots of lace are left on a pilsner glass.
Mustiness is strong, followed by dust and funk. Apple cider and wine are also present. The funk clarifies as horse blanket. Warmth brings out a distinctive beeswax.
The flavor has initial shot of sweetness, then completely dries out as mild tartness takes over. White wine and cereal grains mix with strong cardamum and light watercress. Peppery celery leads to a long finish that becomes very dry and adds cilantro. Light honey becomes evident with warmth.
It has a medium body and the texture of stiff nylon. Alcohol is as expected, while the carbonation is full and prickly. A light metallic feel comes across and never leaves.
This is a decent Saison with mild funkiness. I enjoyed it while relaxing before dinner.
