As a lover of hard work, it's no surprise Mad Tom has an affinity for homebrewing. Hop research is particularly crucial in the development of his recipes, and by singling them out, Mad Tom pinpoints the nuances of each hop's profile.

First up is Australia's Galaxy hops, one of the world's most sought-after varieties! This strain from down under imparts notes of passionfruit, juicy peach, tangy citrus and guava. With new crops popping up every year, which hop should Mad Tom study next?

At my lady Pamela's house; canned and chilled, 473mL in a pint glass. From their IPA Mixer boxset at my favourite LCBO at Tecumseh Mall in nearby Windsor. Canned December 5/24. My 9th beer from the Bracebridge, Ontario brewery, and 5th for 2025. Admired from afar by Gracie the cat...

473 mL can from the LCBO, included in Muskoka's latest IPA mixed pack; dated Feb 29 2024 and served barely chilled.

Pours a clear amber-orange colour, producing nearly two fingers of thick, foamy, off white-coloured head that seeps away over the next five minutes or so. A beautiful arcing pattern of lace adheres to the glass, with a tight collar and sudsy cap holding steady - lookin' good so far. Grapefruit, orange peel and passion fruit on the nose, with added hints of peach drink and guava.

The flavours more or less follow the nose: tropical fruits, stone fruits and citrus are the name of the game, though there is also a fairly robust base of graininess and lightly caramelized malt sweetness. I'm tasting orange, passion fruit and peach initially, followed by citrus pithiness and tropical fruitiness on the back end; finishes with some grassy, resiny bitterness that lingers beyond this ale's fruity conclusion. Medium in body, with assertive carbonation that adds a proper bite to its mouthfeel; feels crisp and goes down smooth.

Final Grade: 3.84, a B+. Muskoka's Single Hop Galaxy IPA is a pretty decent brew that showcases its chosen hop varietal effectively enough. I would say this has more in common with old-school IPAs than with the hazy-crazy stuff that dominates shelves these days - the sturdy malt base and moderate bitterness inevitably steer it in that direction. It's far from spectacular, and I see no reason to select this over their Mad Tom IPA, but it's still a competent demonstration of what Galaxy hops add to a pale ale, and is worth trying for that reason alone.

Pours a copper color with a nice looking frothy head. The nose is of leathery fruit. This single galaxy hopped brew has a pleasant burst of flavor that endures even as it warms. What an IPA should be. One of the best I’ve had.
