Embracing his inner mad scientist, our idiosyncratic friend Mad Tom has taken to the test lab, experimenting with peculiar techniques to surprise his homebrew crew with a new IPA. Trials were conducted to unleash previously locked hop compounds called thiols, resulting in boosted tropical fruit and citrus flavours. Mad Tom hasn't taken off his lab coat and safety glasses yet, what do you think he's brewing up next?

At my lady Pamela's house; canned and chilled, 473mL in a pint glass. From their IPA Mixer boxset at my favourite LCBO at Tecumseh Mall in nearby Windsor. Canned December 5/24. My 13th beer from the Bracebridge, Ontario brewery, and 3rd for 2026. With Sundae the cat's extreme adoration...

473 mL can from the LCBO, included in Muskoka's latest IPA mixed pack; dated Mar 1 2024 and served barely chilled.
Pours a lovely golden-orange colour, its body fogged up by the presence of countless flecks of silty sediment. Nearly two fingers of lumpy, foamy white head rises from the surface, deteriorating steadily over the next five minutes or so; it coats the glass with gobs of messy lace as it recedes to a soapy collar and frothy cap. I'm getting orange and grapefruit on the nose, as well as dank, floral hops, passion fruit, white wine and lychee.
There's certainly no shortage of hop flavour in this one. Tropical notes of passion fruit & cantaloupe are discernible, alongside citrusy flavours of juicy orange, lemon & grapefruit, with hints of white wine, bitter orange and dank, floral, resiny hops bringing up the rear. Resiny finish that lingers into the aftertaste for quite some time. Medium-full in body, with assertive, tiny-bubbled carbonation that prickles the palate continuously throughout each sip; the mouthfeel is crisp, smooth and highly satisfying.
Final Grade: 4.0, an A-. One of the most flavourful Muskoka Brewery IPAs I can recall trying, their Thiol Boosted Hazy IPA might just be the highlight of this mixed pack. Now, this pack is more than four months old, so I suspect all of its contents are on the downslide at this point, but I do think this particular brew is holding up admirably. Hopefully Muskoka releases another batch in the near future, but if you're sitting on a can I'd say crack 'er open as soon as possible, while its deliciousness remains relatively intact.

Another scrumptious IPA from one of Ontario’s best breweries. Pours a rich copper, glowing with a rich, thick head. The nose is of bright tropical fruits. The taste absolutely bursts with citrus flavor.
