As a lover of hard work, it's no surprise Mad Tom has an affinity for homebrewing. Hop research is particularly crucial in the development of his recipes, and by singling them out, Mad Tom pinpoints that nuances of each hop's profile. Enjoy the unique flavours of Mosaic hops with notes of tangerine, lime, passionfruit, peach and blueberries.

473 mL can from the LCBO, included in Muskoka's 2025 IPA Mixer pack; dated Mar 27 2025 and served slightly chilled.

Pours a clear golden-amber colour, capped with nearly two fingers of foamy white head that recedes within a few minutes. A half-inch band of sticky lace adheres to the glass afterwards, with a frothy collar and filmy cap floating upon the surface. Orange juice, passion fruit and guava on the nose, with hints of floral hops and stone fruit.

It's a pretty solid single hop IPA. The malt flavours are grainy & doughy, with a little bit of honey sweetness, but beyond that it's pure Mosaic. I'm getting tangerine, passion fruit and guava, with hints of canned pineapple and peach, as well as some leafy, earthy bitterness bringing up the rear. Citrus tea aftertaste that fades within a moment or two. Medium in body, with restrained carbonation and a smooth, slick mouthfeel; good drinkability.

Final Grade: 3.8, an acceptable B+. Much like last year's Galaxy edition, Muskoka's Single Hop Mosaic IPA serves as a functional illustration of what Mosaic hops can bring to the table. I don't think it's a superlative pale ale, nor would I pick this over their flagship Mad Tom IPA, but it's still a solid brew that makes for good sampler pack filler. Worth a try for educational reasons, but ultimately it's kind of forgettable: maybe they should go with a less mainstream varietal for the 2026 edition.
