This beer was inspired by ancient brews from Ukraine, where pieces of bread were soaked and fermented to create a tasty beverage. We blended in dozens of sourdough bread loaves from our friends at IZOLA Bakery in the East Village. We also used the wild yeast from their sourdough starter for secondary fermentation.
