I get an uneasy feeling when I write a ho hum review for a new brewery in the area. Like dude, I'm not trying to destroy your hopes and dreams and shit, just trying to maintain some integrity with what is being written. But for this second review from Schussboom (I did not much care for their saison), I am happy to report that it will be a positive review.

Pours a clear golden color. Golden Eagles, top 10 baby. Good clarity on display. The aroma checks that yeast box. Light sweet white bread, old Euro like noble hop territory, lemon, pils like grains.

Taste is very much in the kolsch realm in a similar degree as the nose. Mildly sweet lemongrass with a back end crispy boi dryness. Light cracker crispness to the mouthfeel, again, getting that pilsner barley malt influence. Good uppity carbonation.

I enjoyed this during the Syracuse/UNLV football game that went to overtime. Punk ass no talent net negative teenager and town bike 'friend' mom ruined the night afterwards.

another well made beer from these folks, who seem to me to be doing well across a pretty broad range of styles. this is an easy summery yellow beer playing in the kolsch space with european ingredients, a nice fermentation profile, and good attention to detail, a ripper but also more than that, nice in hot weather, well proportioned, very tidy. blonde beer thats nice and clear with a tall white head on it and lots of bubbles the whole way. faint up front sweetness in the aroma and taste, hints of white bread and floral honey, but its quickly gobbled up by the crisping yeast which brings light green melon and even an apple note. the hops here are herbal and grassy to me, noble and classic, well dosed, and add just a bit of bitterness that hits right on the swallow, a good place for it in here. there is a nice freshness that they bring too, and they are real compatible with the yeast in here. from the grain im getting crackery dry german pils character, some minerality, and a pleasingly light body for this. refreshing, bubbly, drinkable, and rather professional. lots of lackluster american made kolsch attempts, but this isnt one of them. well done, simple but also well nuanced, professional.
