Each Slow Saison volume begins with a Rabbit Hill Malthouse four grain saison base, brewed with lemon balm, yarrow, and blue spruce tips.
After fermenting in stainless with our house mixed culture, a portion was then blended with a singular oak barrel containing our mature acidic mixed culture, while the remainder was laid to rest in oak for future volumes. During the blending process, foraged staghorn sumac was added and allowed to mingle with the cultures for one month before being bottle conditioned with local wildflower honey.
