Each Slow Saison volume begins with a rabbit hill malthouse four grain saison base brewed with lemon balm, yarrow, and blue spruce tips.
Vol. 3 consists of this base aged in oak for 7 months, blended and conditioned on heaps and heaps of pitch pine foraged from the Pine Barrens. Bottle conditioned with wildflower honey for an additional 6 months.

Pours a light lemonade and straw color; bubbly with a short lived head; close to zero retention and lacing.
Nose is bright and zippy; tart, lemon candies, oak, really pleasant and light floral character.
Taste wise this is a really refreshing and balanced beer; lemon, little bit of watermelon, oak, light brett character; earthy touch of sap forward pine.
Body is light; perhaps a touch watery, but it suits it well; light refreshing acidity and touch of pine bitterness; overall this thing finishes really clean and bright for a mixed ferm beer.
