A mixed culture saison that was brewed with fresh Simcoe flown in directly from the Yakima Valley. Fermented with our house culture of saison yeast, brettanomyces, and bacteria.

Single 16 ounce can packaged November 25, 2025 purchased at the brewery taproom (had a little taste there).
Bright almost clear golden pour with two plus fingers of crisp white puffy head - laces nicely.
Aroma is up front fruity with notes of pear, apple, apricot and maybe even a hint of melon - a soft touch of funk, Belgian yeast, floral notes, coriander and a whiff of white pepper.
Up front sweet and fruity on the palate - again pear, apricot, spicy with notes of white pepper, coriander - light funk with a white wine effect and just a little bit of bitterness.
Light, though not thin, and spritzy with brisk tingling carbonation - crisp, dry yet refreshing.
Would I have picked Brettanomyces out of this - I am not certain. Either way, absolutely loved this saison.
