Back in October, we brewed some wort intended for saison and barrels. We used 100% Pennsylvania grown barley and wheat for a traditional base alongside 2021 NY Rakau hops from the hop guild. This beer was aged about two months in stainless with brettanomyces before being transferred to rest in oak barrels for 4 months. This is our first exploration into bottled-conditioned saison
