This AIPA was brewed for Bacino's which has at least three restaurants in Chicago. This one leases space from the Park District near Diversey Harbor, near where I also play tennis. Bacino's features Two Bros beers. Nice for the city and suburbs to collaborate. However, this beer needs some constructive criticism... given that it should go with the food, and does not.
I suppose Big Sage Looks inviting, nice foam. It clearly does Smell like an AIPA with lots of fruit. But Taste quickly hits a slippery slope of using too much Sage that, along with the hops, comes in way too bitter for food. Fortunately for me, I had just played tennis and was thirsty and drank the whole thing before the pizza arrived. The ale was refreshing, but it would have ruined an otherwise decent pizza with a nice cracker crust.
I told the manager to sell Two Bros' Domain DuPage, a very food-friendly beer. As for making Big Sage better, that's a tough one. My fall-back is use less bitter hops. I like Two Bros, but this one needed more work before they let it out of the brewhouse.
