Bottom Feeder Ales

Mixed Culture Farmhouse refermented on 4 lbs/gal of nectarines.

The base beer, made with 100% Carolina Malthouse malt, is 75% of our most Brett-infused foeder with 25% blended from a more mild foeder. The bases together form a bouquet of ripe stone fruit with medium tartness then we hand processed nectarines over 3 days picking the ones at peak ripeness each day to add and referment. After 12 weeks of aging and refermentation we dosed local wildflower honey just before bottling to provide sugar and nutrients for all of the live microorganisms to naturally carbonate over a minimum bottle conditioning time of 6 weeks.
