This is a 100% barrel fermented saison utilizing Wild Rice, Barley, and Unmalted Wheat. We threw every strain of brett we have on hand (over 20 strains) in addition to our house cultures which contain Brettanomyces, Lactobacillus, and Pediococcus. This resulted in a very complex saison with lots of fruit qualities (grapefruit, mango, lemon), zesty acidity, and an underlying tone of rustic grains and wild flowers.
