Served via firkin at Al's of Hampden. This one is dry hopped with Simcoe.
A - Pours golden amber with a beautiful two finger tall white head, slowly dissipating down to a thick film, leaving sticky rings of lace on the sides of the glass.
S - Smells of plenty of pine resin, some grassy hops, dash of fruit zest, mildly toasted pale malt and some light sweetness.
T - Starts off with a nice piney hop bite quickly being joined by the light caramel sweetness and fresh cut grass. Some light fruitiness combines with the mild bready malt character toward the end of each sip. Finish is a mix of light sweetness and some hop bitterness, not lingering for very long.
M - Medium body with moderate carbonation. Smooth, bitter feel with a touch of sweetness at the end of each sip. Goes a little thin as most casks do. Very little of the booze is detectable.
O - Since having this first firkin I have had it from the bottle as well as on draft and each time I have been pretty impressed. I think it is kind of a cross between hopback and perpetual. This one should only get better each time they make it as the harvest rolls on.

On cask at the Tap and Mallet in Rochester, NY.
Pours a light amber, with a 2 inch fizzy head, and big swaths of lacing down the glass.
Smells pretty nice, zesty and hoppy, some grass, pine, and a bit of grapefruit. On aroma alone, it seems like this one's gonna be great.
But then something weird happens and it doesn't taste that good. The aroma doesn't come through to the taste really at all, there's a bit of piney bitterness, but other than that- it's kind of bland and watery. Not a whole lot going on. Something went wrong here. It's drinkable, and sort of refreshing, but there's not much to it.
This one has the classic cask mouthfeel, full but light at the same time, with a lower amount of carbonation, appropriate for a cask pour.
I wish this was better- regular Hop Knife is definitely preferred.
