It’s no secret we’ve enjoyed a recent influx of Australian hops at the brewery, so we thought we’d experiment with a first-time hop variety for Scratch #215. And what better platform to tinker with hops is there than brewing an IPA? This time, we’ve dry-hopped with Vic Secret to elicit a huge smack of pineapple and passionfruit as well as pungent pine notes. Mosaic and Simcoe hops further saturate the experience with plenty of citrus, tropical fruit, and pinesap.

Sampling a cellar temp 12 oz bottle poured into a snifter. The beer pours a bright clear pale gold with a frothy bleached white head foaming up almost 3 cm. The head fades slowly via large pock marked craters as the bubbles pop. Some sticky lattice rings my glass.
Aroma is complex hops featuring citrus and a bit of tropical fruit but I also get a little bit of stank resinous herbal note mixed in the background. There may be a bit of grainy malt buried in there, but this is a hop forward nose.
THe first sip reveals a very prickly yet fine carbonation, average body and a slightly sticky texture.
Flavor is a brief bit of caramel malt and then this moves to hops. I get some grapefruit and pine sap with general resinous notes. The finish dries out and leaves a lingering slight bitterness on my palate. I dont get any ABV hints and this beer is super easy to drink and is enjoyable.
Glad to have tried this bottle!

I tried this on tap at the tasting room described as 'stand ard American IPA with Mosaic'
The color is beautiful golden with great clarity and thick rocky white head with fine bead. The smell is very aromatic with an interesting berry-like scent with some tropical hop aromas and light citrus/herbal odors. The feel is excellent with a mild sweetness and moderate high carbonation with moderate bitterness and resinous body with a dry finish.
The flavor is tangy with lemon and lime zest in the hop profile with a moderately light bitterness up front with slight malt backing which balances and a gentle spiced-grapefruit zest flavor is noted mid palate with a linging bitteness after the swallow and gentle astringent flavor yet mild resins smooth the linger and there is low alcohol flavor in general. This is a great IPA, I might say even better than the year round Perpetual -lack of malt flavor shifts the focus to the hops which are delicious!
