Beer dispensed via nitrogen results in a creamy texture and smooth, luxurious mouthfeel. We brewed Scratch #225, an India Pale Ale, with this in mind. Although we threw some pretty potent hops into this batch, the bitterness is muted to a dull roar thanks to the softening of nitrogen. The hop flavors, however, shine through and delight the palate with pineapple, mango and creamsicle notes.
