A spell on oak with our house culture – a wayward mix of microflora we’ve been cultivating since our very first foray into wild fermentation – transformed this saison into something altogether unexpected. The wood tempers the traditional notes of clove and pepper, making way for layers of woodsy earthiness and lemon tang.

Pours a pretty amber-gold, fizzy and clear with a small white head.

Smells wonderful: delicate, floral, and oaky.

Tastes, again, delicate and wonderful. Sour candy up front smoothed out wonderfully by oak in the middle, which resembles a nice white wine. The finish is exquisite: wood-smoothed sour yeast roughed up just a tiny bit by earthen malt.

I absolutely cannot account for the middling scores this beer has received. It's great.

12.7oz corked & Caged bottle into a tulip. bottled 12/21/17, so 5 months in the bottle on top of the wood aging.

loud pop of the cork when opening the bottle. clear close to medium yellow body with big white foamy head leaving thick lacing. lively carbonation.

white wine aroma with a mild funkiness.

there is a feel of a saison minus the usual spice and belgian yeast. buttery vanilla from the lacto, a little bit of the white wine taste, with a touch of green apple. tartness is a little on the mild side. not getting any of the advertised lemon, nor any woodiness.

mouth closing in on full. finish is slightly tart, and there is a little slick feeling.

overall, a nice drink. fair amount going on in the taste department, nicely balanced with no flavor dominating.
