a one of a kind beer that stole that show at this neat little brewery, the menu just said farmhouse, sourdough, citron, i believe this changes a bit from batch to batch, and is always fermented with a yeast from lithuania, which makes it exciting, but it seems funky beyond that, tangy but not quite bacterial in a known way, not exactly bretty, but sort of wild anyway, could be a sourdough element to it, that seems to fit with what i smell and taste here, but the overall complexity and quality of this are pretty epic, cant recommend this one highly enough, its been a long long time since something hit me this unique, never had anything like it. real pale yellow with light hazy but to me still bright in the little globe they served it in, high inch of airy white belgian looking head, super expressive carbonation, this seems naturally conditioned and well excited. the aroma is wild to me, funky all the way, bready and maybe raw wheaty at its core, with definite citrus going on, lemon and meyer lemon and lemon grass, lemon candy even but not sweet, notes of proofing dough, earthy minerals, and lemonade-like tang, vanilla wafer cookie, lemon/lime soda pop, orange popsicle, citrus pith like from white grapefruit, springy white wine, white florals, and potpourri, insanely interesting, i was thinking at first it could be kveik yeast or something like it, but this seems entirely unique and distinct on the ferment to me. the flavor is equally interesting and complex, lemony all the way, could be added citron doing that, a real cool element and very well dosed and compatible with the grain and the ferment. the lemon essence is so pure and fresh, essential oily, and bright without being dominant. the grain is bready and light but whipped feeling, and the funk is crazy, would love to know a little more about this yeast and how its used here. this feels refresh and soft but wicked highly carbonated, almost healthful to me, amateurish in a cool way, like almost a happy accident but i dont think thats the case. truly sensational stuff, should put these guys on the map, i absolutely loved it, challenging because its exotic, but its also crazy drinkable, wow!
