Brewed to the German Standard with 50/50 blend of malted wheat and malted barley creates a tart, dry finish. Fermentation with special German Hefeweizen yeast creates a slight banana, fruity estery aroma. European lemon drop hops added during and at the end of the kettle boil leaves a pleasant lemony flavour and aroma.

One of my most fun things to do as a beer traveler is to stumble upon important pieces of regional brewing. So it is to find Chuck & Son's. Chuck Hahn has 50 years brewing experience and probably rightfully claims title to being the godfather of Aussie crafting. So to culminate his career, he starts this brewery with his son (who has a decade in the beverage industry and has worked his three sons into the team; so we are talking three generations in a just-started micro.) This is all good stuff and based on this Traditional Hefe, they intend for the classics to be Aussie-made. For all that, Chuck & Son's get very good Overall Hugs.

As for their Hefe... very good for a first release. Hefe's are mostly about the yeast and Chuck didn't quite get it right this first time. Lacking foam abundance, Looks seem only average. However, Smells still yield the traditional fruit punch with bananas, just more modest than the Bavarian masters. Tastes are traditional and balanced, fruity refreshing without overpowering sweetness. Medium-mouthed; but a better yeast will elevate the softness to master quality.

I'm glad I drank this and look forward to next year's release with a more active yeast.
