their flagship beer, a clean and interesting lager done with red rice, this place was so impressive, both beer and food, surprised there isnt a little bit more chatter about it, i left fully stoked. i wouldnt call this red beer, its deep brassy honey colored, just bronze tinted maybe, gorgeously clear, richer looking of course than a standard yellow rice lager, no doubt, but still fairly light to me overall, pretty inch of airy white head on it from the tap, lovely retention and lace, this looks killer, real well refined and professional. the aroma at first is sort of muted, toasty, almost vienna-like with some subtle lager yeast character, a touch of sweetness, and some grounding minerality, but as it warms the rice gets somewhat floral, really interesting but in a subtle way, wrinkles of pecan, vanilla, and whole grain bread, even like goji or something, hard to place exactly, but splendid and enticing. the flavor similarly expands a lot as this sits for a few minutes, the rice is decidedly different than the standard in this style, much more hearty, earthen, i get things like clay and wet stones, but also high starch, some modest sweetness, dried red fruits, and even like a hibiscus note or something, really dynamic and interesting, and i like that its only off dry, a little late sweetness softens it nicely, some pils type malt adds depth, a bready wrinkle, and the lagering is expert, way clean, and definitely with some vienna lager personality. great carbonation, some body as rice lagers go but still an easy drinker, technically approaching masterful, and so nice with fresh fish, umami soy sauce flavors, fresh citrus, all of it. this place is awesome, cant wait to go back, and this house lager is very original, loved it!
