A: Pours a clear amber with a thick, creamy white head.
S: Aromas of pine, spruce, juniper berry, bitter orange, kumquat, lemon, lime, tangerine, and grapefruit assault the nose, but are quickly undercut by delicate aromas of wheat, caramel, and biscuits.
T: Notes of pine, spruce, juniper berry, white onion, bitter orange, kumquat, lemon, lime, tangerine, grapefruit, herbs, wheat, biscuits, and caramel wash across the palate. The finish is bitter and resinous with citrus and pine notes framed against a backdrop of mild wheat and caramel.
M: Medium-to-full in body, silky, and relatively creamy. A bit drier than expected. Carbonation is exceedingly gentle. Alcohol presence is relatively restrained, but becomes slightly more noticeable on the finish. Surprisingly easy to drink for this style.
O: A very interesting DIPA from a brewery that tends to do the style justice. The high proportion of wheat malt lends this ale a sweeter, toastier, creamier malt character than other ales of this style. A really refreshing and interesting twist on a style that I fear has become ludicrously overhyped.
