Copenhagen 9/2 2019. 75 cl bottle with both a plug and a cap from Køl web-shop (kolbeer.com). Spotty label with Drawing of the little Characteristic ghost from Fantôme.
Pours hazy golden yellow with a very big white head. Settles as fat, clump of fluffy foam. Massive Lacing.
Aroma is intense and quite tart with lighter hints of Black pepper. Citrus, unripe berries. Sharp and acerbic. Spicy Black pepper.
Light carbonation. Thin, watery and a little bit flat texture.
Flavor is medium intense and tart. Lightly sweet. Followed by a stronger tart, sourness. Aftertaste is bitter sour. Lingers for a bit. Finish is dry.
Very tart and dry Saison from the little Phantom.

Slightly hazy golden color with white head and minimal retention. Grassy, lemon nose. Taste of fruity citrus and peel, bitter hops combine well on a cracker base with funky bugs. Medium body and low carbonation.

Bright saturated orange, thin layer of foam.
Aroma is mild phenolic Saison yeast, light pepper and unfortunately some chlorine.
First sip is Sprite and chlorine. Mild acidity, light wild funk, earthy aftertaste.
Medium bodied, light carb level, less than the norm for Fantôme.
Overall it’s ok, but a little flawed with the chlorine presence. Despite this, it’s not overwhelming and still drinkable. Will revisit in the future.

Poured into a Gulden Draak tulip. Pours a hazy, orange gold with a thin white head that dissipates to patches with slight lacing. Aroma of light grainy malt, saison yeast, brett, over-ripe light stone fruit, lemon citrus. Flavor follows with mild grainy malt, saison and brett yeast, over-ripe light stone fruit, lemon, lime, brett funk and some lightly astringent hop bitterness; moderately tart finish. Medium bodied with light to moderate creaminess. A rustic saison with more than the typical wildness to the yeast resulting in an acidic tartness that is not to my taste, although it would probably appeal to wild ale fans. Not that complex, but some nice citrus notes and faint mixed mystery fruit. No off-beat spicing here, more of a traditional, if tart saison. Not my favorite Fantome, but brett/wild ale drinkers will find it satisfactory.

This was a gift from mid-December 2023 that was drunk in late May 2024.
L: lightly hazy, golden yellow. Fluffy bright white head. No carbonation was visible in the glass.
S: Light cloves, bitter lemon and orange.
T: Bitter orange and Mandarin peel, bitter citrus juice. Zesty, bright and very refreshing. Bitterness sits long on the tongue. Very nice.
M: Smooth yet also spritzy. Carbonation is low.
O: This is a very nice, very bitter beer. It didn't have any of the phenolic notes expected of a Belgian, but the flavour profile it does have is delicious.

Cloudy yellow pour, full white head, spotted lacing. Super botanical, weedy and light basil nose, yup it's a fantome! Taste is the same with yeast, underripe banana, and mild cellar funk, but the hops in their aggressive bitter leafiness overpower over time. Feel is super bitter and yeasty, never gets to harsh but on the way, yup it's a fantome! I just wish this one has a touch more balance like some of their better work

Clear yellow amber brew with an enormous pile of foam in the Duvel tulip. Bubbles streaming long after it subsides. Mouthfeel is lush and prickly. Taste is more fruity and less mineral than a lot of strong Saisons. I'd almost call it a strong golden Belgian but there is that taste of brettanomyces rather than the intense fruity phenols.
Lively and lemony with a modest but persistent malty sweetness. Just a tang of acidity but well balanced. Aromatic with citrus, cereal, straw, and a hint of Hefeweizen. Some pleasant apricot flavor. Quite likeable powerful brew that is distinctly Belgian but well mannered. From the 750 ml bottle with a regular cork and a cap to boot. Purchased in California.

Overcarbed. When it chills out a bit, aggressive Brett funk. Very dry and leathery with a touch of lemon. An acquired taste no doubt, but one can say that about just about everything Fantome makes.

The cork pops out with a lively THUWAP! And pours a richly hazy, honey orange, liquid capped with a cumulus of meringue head (You have ice cream on top of your beer! exclaimed my 4 year old)
The nose is funky and full with a soft breadiness and a pleasant, fruity tartness
Taste is remarkably fruity, apricot and white peach, a bit of overripe pear, but not really sweet. The.dregs bring a yeasty mineralogy that isn't unpleasant, but I'd decant carefully and try the dregs on their own.pour next time.
Mouthfeel is full.but dry with a soft carbonation and clean finish.
Overall this is one of my favorite beers ever. Perhaps the best season.I've tried. At least neck and neck with the fantome saison de Sergio. Great stuff.
