750 mL bottle. Gushes on opening. Clear amber. Smells of warming fall spices and bread with bright yeast notes. Tastes yeasty up front with toasted bread and then spices kick in. Warm, earthy spices throughout the finish. High carbonation. Very strong spices, but they work well.

Lot a5 oct 20. Bb end 2024.
Bottle. White head. Amber, burnt fall dark orange color.
Nicely spiced without being over the top. Maybe sage, mint? I’d expect cinnamon, nutmeg, pumpkin, but none of that really. Very earthy. Some light caramel and cocoa malts. Pretty drinkable.
Middle of the road tome for me.

750ml bottle, 2020 release, "New Dark Version" stamped on the front label, poured into a stemless wine glass.
The beer pours a fairly clear amber color, pumpkin and copper hues, nice clarity with a fizzy white head, low retention and spots of lacing. The aroma is nice, soft pumpkin flesh, a touch of smoke, amber grains, earthy gourd rind, peppercorn with lightly fruity and funky yeast. The flavors are good, hearty amber grains, a hint of toasted bread and burnt crust, light funk and earthiness, peppercorn, fruitiness with soft pumpkin, toasted seeds and a lightly tart acidity at the finish. The mouthfeel is good, lively medium body, coating, crisp with a dry finish that has a kiss of tartness.
Verdict: A nice saison from Fantôme. The pumpkin comes through well and there is only a hint of smokiness which reads more like a toasted seed or browned bread and the mild tartness helps to bring out the fruity elements and plays nice with the rich pumpkin. A good fall beer.
