another green glass 8% abv fantome saison with spices, they keep these so vague, we never know, but i am thankful to have been able to have this one and the version number 25 back to back this weekend, some glorious times to be able to get to drink multiple fantome beers in the same day, weird as they all are, they are one of my very favorites. this one is a little darker, a deep rusty orange color to it, good clarity through much of the bottle despite the obvious body, and a puffing excited three inches of airy white belgian foam, looks stunning in the glass with the head well above the rim. the nose is earthy, herbal, and bitter, almost a vermouth vibe or something to this, nutty and slightly sweet on the grain side, oxidation and green glass funk, their famous saison yeast, slight brett to it here maybe, champagne character, chestnut, almond, clover, dandelion greens, maybe aged hops too, this is really complex. the flavor is more herbal bitterness, cant all be from hops, almost an amaro vibe, but its pretty quick to finish still and balanced enough by the fuller malt build. the green glass again flatters this like it does so many fantome beers, ive come to really look forward to it, less sulfur character here than in others. white wine notes, birch bark, black tea, and spicy white pepper and maybe coriander too, sort of toasted with the bread crusty malt. surprisingly dry to finish, fully effervescent, slightly dusty, faint astringency too but not turning sour or anything. dried orange slice, pretzel dough, pithy bitterness, this is one strange brew, and as always, i long for more information about it. to me not as strikingly weird as the number 25, but darn curious and addicting. a treat to share with my wife!

Sage, mint, juniper, herbs, spice. Orange citrus. Fantome funk/spice. Earthy. Very unique. For how much spice is here, it’s not off putting, surprisingly. Unique as always. Bitter finish.
