Bright saturated gold, racing carb trails, huge head, sticky lacing all around the glass.
Earthy, peppery, floral aroma.
Bittersweet, earthy hops and floral wildflower notes. Finishes dry and lightly bitter with a peppery phenolic spice, light clover honey and dry herbal note in the finish.
Spritzy and effervescent, medium bodied with a slight malt chewiness. Dry bitterness lingers.
Overall this a nice collaboration and my first taste of a Wildflower Brewing & Blending “adjacent” beer. Fantôme is back, and has been more consistent lately. Something to celebrate.

an absolutely glorious bottle of beer, done in collaboration with wildflower from australia, a spiced saison, arent they all from fantome! they never tell us whats in these, a shame, but this is as good as just about any fantome beer i can recall ever having, a perfect bottle to celebrate some success at work, we sipped this slowly, let it warm and expand, and our patience was rewarded, what a brew this is! i can see some yeasty sediment swirling around the bottom inch of this, but even the first part of the bottle isnt fully clear, a slightly murky and dense looking light bronze color, toasted malty looking but not amber or anything, still pale, and with the most incredible head on it, obviously bottle conditioned, three inches high, rising well above the rim like stiffly beaten egg whites, looks incredibly lively, love this on this type of beer. the nose is unique, funky without being fully bretty, light astringent tang, musty saison yeast, spicy like black pepper and toasted coriander seed, floral too, dandelion and clover, some citrus to this, some earthy malt, and a curious sweetness, apple jelly, honey, toffee, this is really rustic and complex. both my wife and i were floored on the first sip, super floral, bitter and herbal, medicinal, light iodine, even a sort of bleach thing, lambic-esque like that but without being sour or even wild, but it is even more complex on the yeast side than the normal fantome strain, i love it! the grain has some body, but the carbonation is so effervescent and drying and excited that this drinks light through the airy foamy head that never settles back. hints of lemongrass, lime leaf, sturdy white wine, green pear, toffee, biscuit, eucalyptus or menthol or something, white pepper, clove, and anise, id love to know what the spices in this are, its so distinctive, but its the ferment that makes this. truly soft mouthfeel even with all the bubbles, and strikingly bitter later on, like intensely so, a tea note to it, but not really hoppy, at least not in a familiar sense. overall this is amazing saison, elite even, fascinating and delicious, memorable, and worthy of our celebratory occasion to be sure! fantome rules!
