Appearance: Pours a briliant golden color capped by a couple of inches of foam; pretty impressive lacing
Smell: Cookie dough malt with a lemongrass edge; maybe a hint of white pepper
Taste: The lemongrass, white pepper and cookie dough flavors clash, on the front end, with the spices building; there is a hint of anise that appears, after the swallow, and while the spices continue to dominate, the sweeter malt flavors linger underneath
Mouthfeel: Medium body with moderate to high carbonation
Overall: Well, here is a beer that swerves all over the map; too bad the flavors never come together

His the style but not all that tasty. Very farmyard aroma. Big white bubly head on light golden body. Above average mouthfeel, very dry and drrying.Grassy hops, above average carbonation as well. Good drinkablity on a hot day but far from the best saison.

A - Pours a bright golden yellow color with a three fingered, sudsy, creamy head and sprightly carbonation.
S - Sourness abounds in the nose with lemon rind and crisp grassy spicey character with a slight sharpness. Underneath the aroma is a dough-like malty character.
T - Mirrors the nose with an even balance through the entire sip. The spicey grass blends very nicely with lemon rinds, coriander, and some mild black pepper. The sweet doughy malt stays fairly subdued and in the end, the mouth is left with a zesty, tart lemon pepper rind finish with some citric and mild pine bitterness.
M - Medium body, perhaps a little heavier than a typical Saison, but then again, why not have some fun with the style? Semi dry finish that sucks most of the spit off the tongue and just enough tartness to kick the salivary glands back in making your mouth question, "What was THAT?!" Crisp.
O - A very enjoyable Saison and I wish I bought more than one bottle of this stuff. Next trip to NY state, I'll be looking to purchase a few more.

22oz gold foiled topped brown bomber with no freshness date.
Faint haze on this glowing golden colored brew, lacing is pretty epic ... lots of stickage. Lemon zest, lemon grass, phenolic funk, chalky yeast, doughy biscuits and green peppercorn in the nose. High level of smoothness, the body is slightly bigger than I expected but still fluffy enough for the style. Wow, there is some funk going on here. Right off the bat there is a pretty big phenolic flavor, wild herb and medicinal is where it is going. My guess is the higher fermentation they talk about. Quick kiss of ripe exotic fruit. Big yeasty twang, lemony rind and a bit chalky. Malt is dry for the most part and does not roll over for anything else. Finish lands semi-dry.
Not half bad, as I said before ... expected a lighter bodied brew, dryer as well. Tasty but the drinkability and refreshing character is not there for me.

This beer poured a golden amber with a two finger high, white head. The head dissipated moderately. Moderate to thick lacing was visible on the glass. The initial smell of the beer was fruity, earthy, pine and spices. The initial taste of the beer was the fruits, which meddled with the earthy flavors. The beer finished with a nice kick of spices. The beer had a medium body with medium carbonation.
Overall, this was a very good beer. I originally did not expect too much from CB's, however this brew blew me away. I think I'll have to pick up some other signature series brews and see how they pan out. Excellent take on the beer style, I would recommend this to anyone, especially those new to the style and craft beers.

Cask Ale at the Old Toad, Rochester, NY
A nice mix of saison flavors with a mix of cask english flavors (could be starting to oxidize).
A very drinkable beer. Not as refreshing as a good Saison but a nice introduction to the style. Not knowing how long it's been on the cask must be taken into consideration. Good nose, love the esters, possibly a touch malty for the style. Good mouthfeel. This would be a great beer for someone with a good palate who has been turned of from craft beers since they're all "biitter".
