a clever beer here and another great one from moonlight, a cedar saison, sturdy for its abv, full of flavor, absolutely delicious. golden and frothy from the tap, brassy shine and not too hazy under an inch of frothy white fluff. the nose is yeast before cedar, as is the flavor, and its not even funky. its clean belgian type yeast in this, i was thinking it might be a little more farmy, but alas its a tidy bright belgian profile, floral honey, pear, white dessert wine, minerals. the cedar is there but its mild as well, well integrated, fully compatible with the yeast profile here, but not as woody and aromatic as i think i wanted it to be, it seems like a natural part of this rather than an additive. lots of body here, creamy and rich feeling, nice with these flavors. green grape and light cedar aromatics, faint lemon in the flavor, great carbonation. i wanted a little more cedar on this, but i like the beer a lot overall, something organic tasting and earthy and natural and unique at the same time. i have loved moonlight in my limited experience, and this really is exceptional. more cedar and a brett pitch would make this next level...
