1.5L caged and corked magnum, 2007 vintage, bottle 204 of 240. As this is my milestone 4000th review, and today is Remembrance Day, it seemed incumbent upon me to find an appropriate offering. Since Flanders Fields is located mostly in Belgium, this one's number finally came up - yep, that's my reason.
With the loudest pop that I've ever heard from a corked beer being opened (quite obviously akin to Champagne), this beer pours a hazy, yet rather bright medium copper amber hue, with a teeming tower of puffy, finely foamy, and loosely bubbly eggshell white head, which leaves some well-spaced remote island group lace around the glass as it slowly fades away.
It smells of moderately tart cherry, lemon, and raspberry fruit, pleasantly musty, earthy yeast, mild funk, but what is there is fairly cheesy, a bready pale malt, slight wisps of wheaten spice, soft black pepper, and further dank hay bale. The taste is quite sour, the acidic nature of the aforementioned fruit now thoroughly decoupled from the whole, the funk still of a middling central European soft white cheese character, with a decent, almost dry doughy pale malt graininess, tame woody oak notes, a fading table pepper spiciness, further wet hay, and some peppy apple vinegar.
The carbonation is quite active, as to be expected, with aggressive rising effervescence well after the pour, and pretty tight on the tongue, the bubbles not really burning, but you get the idea, the body a decent medium weight for the style, and so-so smooth, the varying acid and funk not overt, per se, but interfering nonetheless. It finishes off-dry, the bready pale malt showing some spine, amongst the swirling, but above all, blended, acidic, funky, and sour beasties.
If it wasn't indicated that this spent 4 years in wood before it entered the méthode classique conditioning, I might not ever have guessed. Still pretty sour, but in a rounded, presentable fashion, no tongue-scraping or aching teeth here, friends. The bubbles definitely have an air of good sparkling wine about them, and the 16-proof booze as conspicuous in its apparent absence. Good stuff, to be sure, but I'm not altogether thrilled to have dropped 60 bucks a pint for it - that comes later, when I share the rest of this with a friend who is more of an avowed sour aficionado than I.

Appearance - Pours with a gigantic head. Clear orange body. Thick white collar. Rejuvenates with every swirl.
Smell - Very lemony. Minimal funk. Hay and grain. Bright acidity. A little bit of pepper.
Taste - Lemon and hay. Moderate sourness. Very malty in the middle, which is weird, but not unpleasant. Peppery in the back. Oaky. Spicy, too.
Mouthfeel - Heavy bodied for a gueuze, but very highly carbonated. Not all that sour.
Overall - I find no complaint with it. I don't know who decided it should end up at 8%. It might be masking some complexity.

Aroma is is a great collection of off-flavours , loads of blue cheese, sweat, feet and basement. Nice. Also has citrus, funk and a good level of acidity.
As it opens in the glass, the off-flavours fade a bit leaving behind only some hints of blue cheese. This makes room for the funky notes to really shine and add some complexity to the brew. Aroma is sour and funky, with flavours along the lines just described. Citrus, funk, basement, sweet-acidic.
Mouthfeel is medium with high carbonation.
