10oz glass on tap at the Rackhouse Pub. Dark reddish brown with a smell that reminded me of jolly pumpkin a bit at first. Acidic almost. The flavor was good, a bit of pepper, a bit of funky yeast but not sour and then a bit of whiskey which really came out as the beer warmed up. Overall this was quite interesting and something I would order again.

Had this at the Rackhouse pub where it is an exclusive.
Arrives a cloudy medium brown color with a pretty active head that hangs around and coats the glass nicely.
The flavor profile is all over the place...in a good way. Spicy yeast notes offer up black pepper, earthiness, orange peel, lemon, and a little bit of bready funk. I didn't get much bourbon or vanilla initially, but it pops up here and there as a welcome surprise. Finish is dry, but offers a lingering citric note. No harsh finish here, which is something that bothers me with many beers with wild yeasts.
The texture is thick, which is expected and welcome.
Highly drinkable without being dumbed down or watery.
I like saisons of all kinds and this one is leaning more in the direction of the Fantome and Jolly Pumpkin examples. Very yeasty and funky, but never harsh or puckering.

On tap at the Rackhouse. Black Fox Hiver Saison aged in a Stranahan's Colorado Whiskey Barrel. Pours a nice dark brown color with a some decent head. Aromas of bourbon dominate, along with brown spices, pepper and Belgian yeast. Bourbon again on the palate, which plays nicely off of the sweet/spicy beer. A very good barrel aged beer.
