Abeille is a tart/dry wild farmhouse style ale fermented with local microbes and aged in oak casks for 1 year. It is then refermented with honey from our bee hives located in the Bells Bend farmland area of Nashville.

Funky , sweet , crisp , clean , dry . It has everything a funky farmhouse ale would have and then some . Strange brew but in a good way .

The label describes this as a tart Saison aged on oak for 1 year, followed by a secondary fermentation with local honey from Yazoo's own bee hives.
Poured a slightly hazy golden color with almost no head. It looked still in the glass but with some carbonation. Honey on the nose but also spicy pepper, lemon, white bread, and floral notes. Serious funk on the palate with some hay and horse blanket. Spicy, peppery, and also some plastic-like Brett phenolics. The mid and late palate brought back the sweet honey and pear notes, and these stayed through the finish. Sticky but dry if that makes sense. Alcohol is well-hidden with a slight warming on the finish. The carbonation was low-medium - this seems out of place for a tart Saison. Otherwise outstanding.
