Bottle-Conditioned Saison, Aged In Caledonia Spirits Tom Cat Gin Barrels.

Bottled 11/29/18.
Moderate to vigorous pour yields a 1.5 inch creamy white head over a hazy, golden body with some lacing. Nose of funk (first and foremost), a bit of botanicals from the Tom Cat gin barrels, and slight cracker. Taste mirrors nose nicely and exhibits more of the barrel aged gin qualities. Nice feel with a refreshing, semi-dry finish. I've had the gin from these barrels, and a few beers aged in said barrels, but this is quite possibly my favorite result of their secondary use. Cheers!
