inventive and awesome beer here, a farmhouse type ale brewed with local malts and rice and fermented with a sake yeast strain. it also has some herbs and fresh ginger in it, and i believe its a truly one of a kind drink. i love sake yeast in beer, have been fascinated by this relationship for awhile, and have liked almost all the beers ive had that put it to work, but the rice here, the herbs, and the ginger all seem to accentuate its flavor, fruity and floral alike, with key lime, rose, and jasmine characteristics. i think the ginger might be just a little strong. i agree it fits in well here with the yeast and the overall asian theme of the beer, but the amount is a little much, and i do think it starts to take over, especially as this comes up to temperature a bit. the other herbs are tea-like, with some cool bitterness at the end, and the grain base is very light, but with cool wrinkles of flavor and a nice softness and crispness at the same time. i like that more or less, the yeast and the fermentation profile is what stands out the most in this beer, i think its unique in that regard, and i really dig it. this would be cool with some brett, some gin botanicals, or even a white wine barrel. inventive and well executed beer with some cool ingredients, my favorite from our recent visit to american flatbread!
