its been way too long since i had a beer from wynkoop, and i was excited to see this on tap at the ale house. its a black saison with quince, something quite a bit more ambitious than these guys were going the last time i checked in on them, which is rad. its a cool beer, slick and shiny looking from the tap but a little less active than i like to see a saison in terms of head and carbonation. nice dark malt complexion in aroma and flavor, some chocolate to it, some medium roast, hints of cold brew coffee and charcoal, but picked up a lot by the fresh citrusy and floral quince fruit, the bitterness and freshness together, and the saison yeast strain, which to me tastes like a mellow french type saison yeast, just right with the dark grains i reckon. its complex but cohesive, i think the fruit is subtle enough to be secondary to the grain, and its not heavy despite being so dark. its very dry which helps too, and it has a neat white wine element at the end from the yeast that gives it life where the carbonation sags. i like it being low alcohol and i like it being something a bit different. i enjoyed this a lot, and hope its a sign of things to come from these guys, who sort of fell off my radar due to lack of anything exciting...
