Collaboration with Holy Mountain Brewing

he second beer in our Smashed, Grabbed, & Hop Dusted series in collaboration with Holy Mountain Brewing Company out of Seattle, Washington. This wild IPA shouted experimental HBC 342 and three other hop varieties, as well as six different malts. The hops give notes of apricot and citrus with a mildly tart and bitter body. Aroma of pineapple and stone fruit in the nose. An ale with all the hops you could want, coupled with our trademark funk.

Hazy yellow color with frothy off-white head. Aroma has yeasty funk, fermented pineapple and citrus fruits. Taste follows with the yeasty notes, slightly tart, unripe stonefruits and citrus rind bitterness on the finish. Medium to light body, medium plus carbonation. Really good melange of hops and yeast funk.

Pours a cloudy maize color. 3/2 inch head of an off-white color. Great retention and great lacing. Smells of floral hops, citrus hops, strong bacterial funk, earthiness, yeast, hint of ester, and a hint of piney hops. Fits the style of an American Wild Ale. Mouth feel is sharp and clean, with an average carbonation level. There is an elevated tartness and to a lesser note dryness and bitterness. Tastes of floral hops, citrus hops, strong bacterial funk, strong earthiness, yeast, hint of ester, hint of mustiness, and a hint of piney hops. Overall, good appearance, aroma, body, blend, and complexity.

750 ml bottle into tulip glass, bottled on 9/6/2017. Bit of a gusher upon opening. Pours fairly hazy/cloudy golden amber/light orange color with a 2-3 finger dense and rocky white head with amazing retention, that reduces to a large cap that lasts. Thick soapy lacing clings on the glass, with a moderate amount of streaming carbonation retaining the cap. Fantastic appearance. Aromas of big lightly tart lemon, lime, grapefruit, peach, pear, apricot, pineapple, red apple, orange peel, mango, melon, citrus rind, peppercorn, pine, oak, hay, straw, herbal, floral, grass, wheat, cracker, and biscuit; with lighter notes of leather, lacto/musty funk, white vinegar, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/spicy/funky yeast, citrus/fruity/pine hops, oak barrel, and moderate bready malt notes; with great strength. Taste of big lightly tart lemon, lime, grapefruit, peach, pear, apricot, pineapple, red apple, orange peel, mango, melon, citrus rind, peppercorn, pine, oak, hay, straw, herbal, floral, grass, wheat, cracker, and biscuit; with lighter notes of leather, lacto/musty funk, white vinegar, and yeast/oak earthiness. Light-moderate pine/grassy/citrus rind bitterness, yeast/tannic oak spiciness, and light lactic tartness on the finish. Lingering notes of tart lemon, lime, grapefruit, peach, pear, apricot, pineapple, red apple, orange peel, mango, melon, citrus rind, peppercorn, pine, oak, hay, straw, herbal, floral, grass, wheat, cracker, biscuit, leathery/musty funk, white vinegar, and yeast/oak earthiness on the finish for a while. Awesome complexity, robustness, and balance of fruity/spicy/funky/light acidic yeast, citrus/fruity/pine hops, oak barrel, and moderate bready malt flavors; with a great malt/bitter/tart/spiciness balance; with no astringent hop or puckering flavors after the finish. Light-moderate increasing dryness from tart/bitter/spiciness. Medium-high carbonation and medium body; with a very smooth, moderately bready/grainy/sticky/tannic, and lightly acidic/resinous/rindy balanced mouthfeel that is great. Zero warming alcohol as expected of 6.5%. Overall this is an awesome sour IPA. All around great complexity, robustness, and balance of fruity/spicy/funky/light acidic yeast, citrus/fruity/pine hops, oak barrel, and moderate bready malt flavors; very smooth and easy to drink, despite the increasing bitter/tannic/drying finish. Classic JP house sour/wild funk profile with balanced hop complexity; nice oak presence and malt backbone. Very similar to the first one, but the hop profile was more resinous/rindy and less tropical. A really enjoyable offering.
