All Eyez Bánh Mì was brewed in collaboration with our good friends from LA based, Monkish Brewing Company. This Sour Saison was brewed to pay homage to Henry’s Vietnamese heritage and one of our favorite sandwiches, the bánh mì. Including additions of Baguettes, Carrots, Daikon, Jalapeños, Cilantro, Sea Salt, Peppercorn, and Black Lava Salt. This beer barely came to fruition after nearly decommissioning Monkish’s brew system by clogging all wort ways. Like anything in life, you learn from your mistakes and we brewed this recipe Jolly Style!

Better than good but not special.
L: very typical yellow beer. Neither worrisome nor promising.
S: ooh, I might get an excellent saison out of this. MIGHT!
T: As good as an uncomplex saison can be. Really nice but just one note. There might be something else there, but my nonsupertaster gene palate doesn’t get it.
F: pleasantly light. No adverse aftertaste.
O: didn’t know what I was ordering. Happy with the selection to accompany the chicken soup at Nobi Webster, TX.

Very nice saison! Served on tap at the pub in a snifter. Pale corn colored liquid, no foam. Aromas of salt and straw, grain, and grapes. Nice flavors of jalapeño, grain, cracker, citrus, funk, and carrots, with a cilantro finish and light warming.

750 ml bottle into tulip glass, bottled on 1/5/2018. Pours slightly hazy/cloudy pale golden yellow color with a 2 finger dense and rocky off white head with fantastic retention, that reduces to a nice cap that lasts. Thick foamy lacing clings on the glass, with a moderate amount of streaming carbonation retaining the cap. Fantastic appearance. Aromas of big tart lemon, lime, orange, red grapefruit, peach, pear, pineapple, apricot, passion fruit, mango, melon, guava, berries, red/green apple, jalapeno pepper, carrot, radish, cilantro, citrus peel/rind, peppercorn, pine, oak, hay, straw, grass, wheat, cracker, white bread dough, and lightly toasted biscuit; with lighter notes of sea salt, smoke, leathery/musty/lacto funk, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of citrus/tropical/earthy hops, fruity/funky/spicy/acidic yeast, spices, vegetables, oak, and bready malt notes; with big strength. Taste of big tart lemon, lime, orange, red grapefruit, peach, pear, pineapple, apricot, passion fruit, mango, melon, guava, berries, red/green apple, jalapeno pepper, carrot, radish, cilantro, citrus peel/rind, peppercorn, pine, oak, hay, straw, grass, wheat, cracker, white bread dough, and lightly toasted biscuit; with lighter notes of sea salt, smoke, leathery/musty/lacto funk, and yeast/oak earthiness. Light-moderate pine, citrus peel/rind, herbal, floral, woody, grassy bitterness; jalapeno, peppercorn, yeast, oak tannin spiciness; and light Brett tang/tartness on the finish. Lingering notes of tart lemon, lime, orange, red grapefruit, peach, pear, pineapple, apricot, passion fruit, mango, melon, guava, berries, red/green apple, jalapeno pepper, carrot, radish, cilantro, citrus peel/rind, peppercorn, pine, oak, hay, straw, grass, wheat, cracker, white bread dough, biscuit, light salt/smoke/leathery/musty/lacto funk, and yeast/oak earthiness on the finish for a good bit. Awesome complexity, robustness, and balance of citrus/tropical/earthy hops, fruity/funky/spicy/acidic yeast, spices, vegetables, oak, and bready malt flavors; with and awesome malt/bitter/spiciness and tart/tangy balance; with no puckering/astringent flavors after the finish. Fairly crisp/clean finishing. Light-moderate increasing dryness from lingering bitter/spiciness, tart/tangy yeast, and carbonation. Medium-high carbonation and medium body; with a very smooth, moderately creamy/bready/grainy/sticky, and fairly acidic/tangy/tannic balanced mouthfeel that is great. Zero warming alcohol for 5.6%, mild lingering pepper heat after the finish. Overall this is an awesome spiced/vegetable wild saison! All around awesome complexity, robustness, and balance of citrus/tropical/earthy hops, fruity/funky/spicy/acidic yeast, spices, vegetables, oak, and bready malt flavors; very smooth and fairly crisp/clean/refreshing to drink with the modestly bitter/spicy/tart/tannic/drying finish. Awesome balance of Chinook/Citra/Columbus hops, spices, vegetables, and classic JP Brett/Bacteria complexity; with great oak presence and a bready Wheat/Vienna/Pils malt backbone. Mild residual sweetness with crisp dryness. A really enjoyable offering, and outstanding experimental style example as expected. Not overwhelming on any aspect.
