This Sour Saison was inspired by our good friends at Off Color Brewing. Jon has a way with light, funky fresh beers, that we find magical. To emulate this, we took a grist bill of Pilsner and Pale malt, added German Hallertaur hops, and then let it mature in oak for 9 months. This Saison is extremely quaffable with subtle notes of lemon, citrus, and funk, followed by a refreshing tartness.

Bright, brilliant gold, sharp clarity and a finger of foam that recedes to a thin collar and spotty lace.
Dried pineapple aroma, apple cider vinegar, vague earthy noble hops, mild oak and minerality.
Puckering lemon and crabapple acidity, sour and dry. Very light bodied, crisp and clean. Tangy wild cider finish.
Straightforward with mild funk that I wouldn't characterize as complex, but it's very drinkable and refreshing.
Very clean and light-bodied from the Pilsner malt, light carb and scrubbing lactic acidity leaves the palate spotless.
Nice stuff, still trying to figure out if this was a brew collab, or merely "inspired by" Off Color as the label states.

750 ml bottle into tulip glass, bottled on 8/15/2018. Pours slightly hazy pale golden yellow color with a 1 finger dense and rocky white head with great retention, that reduces to a small cap that lingers. Nice dense spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big tart lemon, lime, orange, citrus peel/zest, peach, pear, apricot, melon, red/green apple, white grape/wine, oak, peppercorn, hay, straw, grass, cracker, white bread dough, light leathery/musty/lacto funk, and yeast/oak earthiness. Damn nice aromas with great balance and complexity of fruity/funky/acidic/spicy yeast, oak barrels, and moderate pale malt notes; with big strength. Taste of big tart lemon, lime, orange, citrus peel/zest, peach, pear, apricot, melon, red/green apple, white grape/wine, oak, peppercorn, hay, straw, grass, cracker, white bread dough, light leathery/musty/lacto funk, and yeast/oak earthiness. Slight touch of white wine vinegar in aromas/flavors. Light-moderate lactic tartness, Brett tang, and yeast/oak tannin spiciness on the finish. Lingering notes of tart/tangy lemon, lime, orange, citrus peel/zest, peach, pear, apricot, melon, red/green apple, white grape/wine, oak, peppercorn, hay, straw, grass, cracker, white bread dough, light leathery/musty/lacto funk, and yeast/oak earthiness on the finish for a good bit. Awesome complexity, robustness, and balance of fruity/funky/acidic/spicy yeast, oak barrels, and moderate pale malt flavors; with an awesome malt/tart/tangy/spiciness balance, with no puckering/astringent flavors after the finish. Fairly crisp finishing. Light-moderate increasing dryness from lingering tang/tartness, yeast/oak spiciness, and carbonation. Medium-plus carbonation and light-medium body; with a very smooth, moderately creamy/bready/grainy, and acidic/tangy/tannic balanced mouthfeel that is great. Zero warming alcohol for 5.8%. Overall this is an awesome sour/wild saison. All around awesome complexity, robustness, and balance of fruity/funky/acidic/spicy yeast, oak barrels, and moderate pale malt flavors; very smooth and fairly crisp/refreshing to drink with the mellowly acidic/tangy/tannic/drying finish. Nicely soft and not overly lactic. Awesome well rounded classic JP Brett/Bacteria/Saison yeast complexity; with great oak presence and pale malts against acidity. Mild residual sweetness with crisp dryness. A really enjoyable offering, and impressive spot on style example. Right on point with expectations.

Very nice solid tart saison, looks a nice pale yellow in the glass, minimal head, some lacing. Smell is minimal, lemon citrus, ripe apple. Tastes nice notes of lemon, nice oaky character, apple cider, crisp, clear, refreshing, light.
