Poured from 750 mL bottle into tulip.
A: Pours a very dark and murky black hue with 1 inch dark mocha head that quickly recedes to a thin skim. Careful with opening…it’s definitely a live beer!
S: Tart cherries with secondary sweet blackberries, dry dark chocolate, funky yeast with hints of balsamic, earthy note, coffee, and leather. Underneath the strong fruit notes, there is a complex brew lurking!
T: Balsamic with tart cherries and lightly sweet blackberries up front, then transitions to cocoa, nutty malt, dry oak, funky yeast, and an herbal note. Different than aroma, but still complex and following the main points. With warming, a coffee note emerges.
M: Light body. Tart, sour, and light fruit sweetness. Dry throughout. Interesting herbal and balsamic astringency. Funky yeast in the background. Lingers nicely on the palate.
D: Definitely an interesting brew with layers of complexity. Don’t think I’ve had a fruited barrel-aged wild stout before and I’m diggin’ it. Nice fall sipper.
