At what Specific Gravity should the Brett (WLP644) be pitched?

    The previous poll (#20) ended in a tie of sorts.

    This poll (#21) will definitively determine at what point in the fermentation the Brett yeast strain (WLP644) will join the Sacch strain in the primary. It will be expressed in terms of the specific gravity at pitching time.

    This runoff is a straight plurality poll. No write-ins.

    I recommend you think about this in terms of not only your personal preferences, but also in the context of the recipe so far. I strongly suspect many folks have not done this before, so please continue to discuss the options at length.

    This poll will be open for 47 hours.

    The Averagely Perfect Saison so far...

    ABV: 5.7%
    OG: 1.045
    FG: 1.002

    Grain Bill:
    Belgian Pilsner Malt (68%)
    Flaked Wheat (17%)
    Vienna malt (15%)


    Yeast: WLP565/Wyeast 3724, followed by WLP644 in primary, sometime before attenuation is complete (timing TBD, this poll).

    So we'll run off 1.033 vs 1.012.

    Gulp . . . last two polls ended in a tie. I can see it now . . . the mean/median voters dividing up their votes in a last ditch coup d'etat effort to seize the wicked middle ground :slight_frown: . We bipolar voters may have to form a coalition to protect our extremes. But possible we get a cool name for this far-from-average brew: Saison Bipolaire

    I am predicting 1.0225 as this is becoming very polarized. I see a not her 50/50 split with an average of the two. The bottle/secondary folk on 1.012 and the co-pitchers on 1.033. Very interesting that all those "some time prior to final gravity" folks had no response in the previous post as to why or when.

    I was a bottling guy, but voted 1.033 because I figure in for a penny, in for a pound. I also voted this way for the flaked wheat and vienna.

    Sticking with my vote of 1.033 for the reasons I mentioned before. I will say though, that the rationale presented in the last poll by the 'late pitching' crowd was strong enough that I will be happy no matter the outcome. The funny thing is, since no one seems to have a ton of experience on the matter, I believe that we still don't know if the reasons provided for pitching 644 early or late will actually equate to the results that we are fighting for.

    At the end of the day, I think either schedule will provide a killer saison and at this point, I dont care who is "right", I am more interested in which one of these methods will produce a beer that is better to my palate. To over simplify, a fruity Saison or an earthy/peppery/spicy Saison. There are still so many factors that will come into play (some of which we might not even vote on): Hop selection. Fermentation temp. Length of primary/secondary(?)/conditioning. Cell count. Do we pitch our starters at high krausen or do we cold crash/not use. starters ...

    Once all the variables get sorted out, I really want to do a split batch: One pitching 644 at 1.033 and one at 1.012. This is the most interesting variable on the table right now.

    Voted for 1.033, but I reserve my right to switch so we can have a tie again :slight_smile:

    A number of us thought that on the previous beers and I think we were proven wrong. Here's to another good surprise :slight_smile:

    Again, I'm voting as late as possible for the Brett; fruity is not what I'm looking for here.

    Hereafter referred to as the "Gang of 39".

    I expect temperature to be as polarized as anything we've done so far . . . will make the Vienna poll look like a stroll in the park. And the ytuo/rte5 poll promises to be a barn-burner. VikeMan has showed an obvious bias for ytuo in the past . . . we'll wait and see how objective he can be. He's already displayed a major flip-flop by ignoring the mean.

    Yeah, saw that coming. With the results fairly balanced, the "Middle-Grounders" clearly have the upper (polarized) hand. As a Low-Grounder it may be fitting to get into bed with them, anything to deflect the well-meaning-but-misinformed High-Grounders. Recipe building makes for strange bedfellows . . . :slight_frown:

    I would like the record to show that at least one member of the Gang of 39 addressed the "some time prior to final gravity" question. Also, I would like to give you mad props for dredging up the ytuo/rte5 debate, I had forgot how awesome that thread was :slight_smile:

    I think early is the best chance for seeing what 644 has to offer. And it sounds like what it has to offer is tropical fruit.
