    Poll #8 <- determined that the yeast strain will be Wyeast 2565 Kölsch.

    This poll will determine the percentage of Wheat Malt (thus leaving the rest for German Pilsner Malt) in the grist .

    The percentage being selected here is by weight, not by gravity "points" contribution. Want a percentage not listed? Write it in.

    If you are not a believer in specifying fermentables by percentages (due to non-proportional flavor/color extraction for different grains at various mash efficiencies), the assumed mash efficiency for the grains in the final recipe will be 70%, if that helps.

    When this poll is done, I will look at the data a few different ways to determine the central tendency. It may or may not be as simple as a plurality would indicate. There may or may not be a runoff. It depends on the data. Pollster reserves the right to cast a tie-breaking vote (or not) in this poll or any subsequent polls.

    I recommend you think about this in terms of not only your personal preferences, but also in the context of the ABV and Final Gravity (and thus the attenuation) already selected, the other grain (% TBD) already selected, and the yeast strain already selected. In other words, build your split for both grains in your head before voting in this poll.

    Keep in mind that these polls must ask one question at a time, while normal recipe formulation often involves back and forth interplay between decisions and changes to decisions. To a small extent, we have that capability too, in the form of buyer remorse polls.

    How much wheat do you all think you need? I feel like you won't know it is there at 2% but wonder how much before you will notice, and of course, will I like what it brings?

    In trying to find out whether this was discussed before, I found this thread from several years ago. Sort of interesting to see what many of us said about Kolsch in 2016. It doesn't definitively answer the wheat question, but it did remind me that I used own a cheesehead hat.

    I'm guessing that applies only to the poll in which the offer is made and not to subsequent polls, unless reiterated.

    Sure it is, but not really, as the place where possible malts might have been thrown out was in the combo poll. Cheers!

    Historically, write-in votes for 0% for an ingredient that was already "in" have been ignored. I'm guessing the pollster would do the same thing if it happened in this poll.

    0% is intentionally not a choice, just like "none of the above" is never a choice in a poll that is choosing a more specific variety of something that has already been more generically selected to advance to a combo poll. As @utahbeerdude said, the combo poll was the place to kill this.

    I want to 'notice' 100% Pilsner Malt but that is not going to happen for an Averagely Perfect Kolsch.

    @riptorn @JackHorzempa i have never made a kolsh but I have made beers made with wheat and oats that you would swear were 100% pilsner so I’m not particularly worried about the negatives of wheat.
    With wheat in my beers I get a malty flavor that is different than barley. I don’t know if that fits style, maybe I’m wrong.

    20% maximizes the difference relative to anything I ever made with the selected yeast.
